Simple Cupcake Recipe

Hands up, who likes cupcakes? I'm sure quite a few of you did or at least thought it in your head. Let's face it: cupcakes are delightful, aren't they?! Today, I thought I'd share my quick and easy cupcake recipe after whipping up a batch for a charity fundraiser at work (more on that in a bit!).
Cupcake Ingredients (makes around 20):
- 200g soft, unsalted butter
- 200g caster sugar
- 200g self-raising flour
- 4 medium eggs
Preheat your oven to 180oC, then put the butter, sugar and some vanilla essence (however much you feel is necessary, I usually add a couple of teaspoons) in to an electric mixer and whiz until pale and fluffy.
In a separate bowl, whisk the eggs and then slowly add to the mixture, blending as you go along - not whilst you have the lid off though, you don't want to be cleaning cupcake mix off the ceiling for weeks after! Once it starts curdling, add a little of the flour. Once all has combined well, add the remaining flour and whiz until all mixed and looking like below.
Divide the mixture in to the cases on your baking tray(s) and bake for 18-20mins or until the cakes are lightly golden and spring back to the touch.
Frosting Ingredients:
- 200g soft, unsalted butter
- 400g icing sugar
- Vanilla essence
- Pretty stuff to decorate
How to:
Using an electric mixer, combine the butter, sugar and vanilla essence until the mixture is light, fluffy and smooth. Once the cupcakes have finished baking, take them out of the oven and let them cool.
I left mine over night as I was cooking really late and was too tired to frost!
Once cooled, add the frosting (this can be done by using a piping bag or spoons) and decorate away.
The reason I made cupcakes and thus decided to share the recipe with you was all down to a bake sale we had in the office to raise money for Jonjo Rooney, from the charity Bpositive.
Bpositive is a foundation that has been formed to offer moral support for acute leukaemia patients and their family and friends. Jonjo, the founder, was diagnosed with leukaemia at the age of 23 and made it through his treatment (read more on his story here) and has been raising awareness and offering support ever since.
Just the other week, he cycled from Birmingham to Hamelin in North Germany to meet his bone marrow donor and to raise money. He did incredibly well and you can see about his journey here.
